SoyBoy Smoked Tofu Benedict

A plant-based twist on the classic Benedict, featuring layers of savory pan-fried smoked tofu, fresh spinach, and a rich Hollandaise sauce.

This plant-based take on a brunch classic features toasted English muffins layered with fresh baby spinach, pan-fried SoyBoy Smoked Tofu for deep, savory flavor, and SoyBoy Firm Tofu for a smooth and satisfying contrast. A drizzle of rich Hollandaise sauce ties everything together, with a sprinkle of chives and paprika for the finishing touch.


Ingredients:

  • English muffins, toasted

  • 1 package SoyBoy Smoked Tofu

  • 1 package SoyBoy Firm Tofu

  • Baby spinach

  • Chives, diced

  • Paprika, for garnish

  • Hollandaise sauce

 

Instructions:

  1. Slice the SoyBoy Smoked Tofu down the center to create four flat squares from each block. Cut the SoyBoy Firm Tofu into discs, roughly the size of the English muffins.

  2. Pan-fry the SoyBoy Smoked Tofu until the edges are brown and caramelized.

  3. Place a handful of baby spinach on one-half of each toasted English muffin.

  4. Layer the tofu by adding a slice of SoyBoy Smoked Tofu on top of the spinach, followed by a piece of SoyBoy Firm Tofu.

  5. Drizzle with Hollandaise sauce and garnish with chives and paprika.
