SoyBoy Ravioli Verde

With Spring Vegetables and Fresh Mint

This nourishing dish brings together the delicate flavors of asparagus, broccolini, and sweet peas with soft, pillowy ravioli. The warmth of sautéed vegetables and the hint of fresh mint create a balance of comfort and brightness. Ingredients:

  • 1 package of SoyBoy Ravioli Verde

  • 1 cup broccolini

  • ½ bunch asparagus

  • 1 cup frozen peas

  • Fresh mint

  • Italian seasoning

 

Instructions:

  1. Cook the Ravioli Verde as instructed on the package.

  2. Drain and toss in oil to avoid sticking.

  3. Cut asparagus and broccolini into bite-size pieces. 

  4. Heat the asparagus, broccolini, and frozen peas in a little bit of oil. Cook until bright green.

  5. Toss with ravioli, and garnish with Italian seasoning and mint leaves.
