Tempeh Kale Sandwich

1 – 8 oz package SoyBoy® Tempeh
(Soy or 5-Grain)
2 tablespoons oil
2 tablespoons soy sauce
salt and pepper to taste
1 small onion – sliced

2 cups Kale – chopped
1 tomato – sliced
Mustard
Balsamic vinegar
Nutritional yeast
(Makes 2 sandwiches)

  1. Cut tempeh into 4 3" x 3" x 1/4" pieces and sprinkle with soy sauce.
  2. Heat oil in pan on medium/medium-high and saute each piece of tempeh until golden brown on each side. Add 2 more tablespoons of oil if necessary. Season with salt and pepper immediately after cooking.
  3. Steam kale for 4 minutes or until tender.
  4. Serve on bread or a roll and top with sliced onion, tomato, mustard, balsamic vinegar, and nutritional yeast.
